Quinoa Chicken Nuggets

You know those days when you're just wanting to eat out but you know that it won't be good for you? I have those days, and found the perfect recipe to feed that craving! It's a mix of healthy and fun, and it's super easy too. 

I usually love Wendy's Chicken Nuggets, is that terrible of me?! But I know how unhealthy they are and I know that home cooked meals make me feel so much better.

This is your typical breaded chicken recipe, but even better since it's covered in quinoa (sidenote: did you know that quinoa has all of the essential amino acids? That's why everyone is telling you how good it is and recommending you to eat it-so, so good for you). Recipe was retreived from Creme De La Crumb

It's so easy to make this!
Start with cooking your quinoa, I like to do this a little ahead of time because it's super hot afterwards and I like to let it cool down before covering the chicken with it.
Mix dry ingredients in a bowl and then eggs and water in another. When quinoa is cooked and cooled, cut chicken pieces into bite-size pieces and dip in flour mixture, egg misture, and then quinoa. Place on a sprayed or lined baking sheet. When they are all on the sheet, spray lightly with cooking spray. This helps to keep the crispy edges on the chicken nuggets. Cook for about 20 minutes or until chicken is cooked through and edges look a little crispy.



Ingredients: 
3-4 chicken breasts cut into 1-inch pieces
2/3 cup flour
1 tsp. salt
1/4 tsp. pepper
3 eggs
2 Tbsp water
2 cups cooked quinoa
Directions: 
  1. Preheat oven to 425° F
  2. Grease or line cookie sheet
  3. Mix flour, salt, and pepper
  4. Mix eggs & water
  5. Cover chicken pieces in flour, egg mixture, and then quinoa
  6. Place on greased pan
  7. Once all chicken is on the cookie sheet, spray them with very light coat of cooking spray 
  8. Bake for 15-20 minutes
