Perfectly Autumn Pumpkin Bread

This is the pumpkin bread that I grew up on, and oh man, it’s amazing. The two loaves it makes wouldn’t last a day with us kids cutting it off piece by piece, loading butter on top of it (now I think how gross it is how much butter we put on there), and putting it in the microwave for 15 seconds while we cut another piece to eat before our warm piece. It was the best thing ever.
Now, I have to half the recipe or try and give some away because I know if this bread is sitting there, I could eat it all gone.
Yesterday, I sent two loaves to my brother for his birthday- hopefully they won’t get all crumbled up in the mail!! He’s been out on his LDS mission for almost three months and I love to hear from him! He’s probably the sibling that loved the pumpkin bread the most so I thought it would be a nice gift to send him. He’d always put a ton of butter on each piece. He’s know pretty much famous at our house with the most interesting sandwich creations. His “triple dumplin’” is probably my favorite to date. Three bread slices, any lunch meat in the fridge, butter, and ketchup. Could you think of anything worse? But, that little elementary schooler loved them so much, and loved being independent and making his own meal. So hopefully living on his own at 18, he's now able to make better sandwiches than that.


I love this recipe because it’s seriously sooo simple! Two bowls and a couple bread pans, and that’s all that you need!

Makes Two Loaves

Ingredients
1 cup oil
4 eggs
2/3 cup water
2 cup pumpkin puree
3 1/2 cups flour
3 cups sugar
1 tsp. baking soda
1 1/2 tsp. salt
2 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. cloves
1 package chocolate chips



Directions
  1. Preheat oven to 350 ℉
  2. Prep two bread pans with cooking spray and a light coat of flour
  3. Mix oil, water, eggs, and pumpkin puree until combined
  4. In another bowl, mix together flour, sugar, baking soda, salt, nutmeg, cinnamon, and cloves
  5. Combine mixtures of bowls together and add chocolate chips
  6. Spread evenly in bread pans
  7. Cook for about 1 hour (stick a toothpick inside, and if it comes out clean, they're finished!)
